Light fluffy classic sponge. This recipe was my Great Aunt Gladys. Served with boysenberry jam and fresh vanilla bean custard cream.

 

Large sponges can be made into a small two tiered cake.

Xtra large will naturally be a two tiered cake. Its a delicous monster!

 

This sponge is a European style sponge. It has no butter or oil in it and is a dryer version compared to that of a Maderia. 

 

Cakes are not iced around the sides.

 

Flower Preference:

None = Naked Cake

Single Bloom = One Singular Flower

Posey = Small Arrangment with Freeze Dried Fruits and Fresh Berries (in season)

Wreath = Full Noise. Floral Arrangement Around Edges With Freeze Dried Fruits and Fresh Berries (in season)
