Spinach, Bacon and Cheddar Puffy Omelette



How about a yummy start tomorrow morning? Yes please! This is such a delicious omelette recipe and you can put whatever you like in to make it perfect for you. Also a great breakfast for kids to get them started on their busy day. I used size 8 eggs, however to get the same size with the usual size 6 or 7, you will need to use 3 eggs. Ingredients 2 eggs 1 tbsp water 2 rashes streaky bacon, chopped 5 spinach leaves, chopped 2 tbsp grated cheddar, aged is good 1 tbsp Italian, chopped Cracked black pepper 1 tsp butter Heat a medium fry pan. Separate eggs into two bowls. Add water to yolks and whisk for 1 minute. Stir in bacon, cheese, spinach, parsley and pepper. Set aside. Using an electric beater whisk egg whites until soft peaks form. Pour bacon mixture into whites and gently fold through until just combined. Add butter to a pan. It should bubble. Pour in egg mixture and spread to edges and even out the top. Cook over a low-medium heat for 4-5 minutes or until bottom browns. Place under a hot grill for about 2 minutes. Place back on stove and gently, using a spatular, tilt the pan and flip the top half over the bottom. Cook for a further 2 minutes. Serve. Enjoy!
