Raspberry and Vanilla Spiral Cookies


Ever since I saw the AMAZING spiral cookie photos from Sprinkle Bakes, I have been dying to find any excuse to try the recipe. Today Offspring 17months. My little big human loves sweet treats, so I thought 'why not'. Yumbos! Now I have to admit I suck at following recipes. Generally because I get carried away and there are always distractions etc etc.. so this is my version of the recipe.


2 cups standard flour


½ teaspoon baking powder


¼ teaspoon salt


⅔ cup icing sugar


¼ cup castor sugar


283gm butter, room temperature


1 teaspoon vanilla

2 teaspoon raspberry extract, or whatever you what


1 teaspoon(or more) pink food coloring


1 tablespoon standard flour


1 cup 100's and 1000's

Prehead oven to 150 

Mix flour, baking powder, salt, sugars, butter and vanilla by hand or in a food processor and mix till dough forms a soft ball. 

Divide into 2 equal portions.

Add extract, colouring and flour to one dough portion and mix till just combined.

Roll out each portion between separate sheets of baking paper. 

Remove the top sheet of baking paper from both doughs, being super careful take the pink dough and flip it on top of the vanilla dough. Try and aim for a perfect hit otherwise it can get messy. NOTE; feel free to follow the other instructions on how to do this. My impatience kicked in here as I couldn't be bothered waiting to chill it the first time round.

Trim and make a rectangle 29 x 21 cm and 1/2 cm thick.

Refrigerate until firm.

Remove dough. When dough is just pliable, starting with the long side, begin rolling. Try to avoid air pockets. Your dough may tear, thats fine, just press back together carefully. 

You should now have a log. Give it a quick roll in the baking paper to smooth the finish. 

Place the log on a plate with 100's and 1000's and completely cover. It may pay to press them in slightly so they get stuck in there. 

Refrigerate until firm

Remove log. Cut into slices 1cm thick. Place on a baking paper lined tray. Leave a bit of space between each biscuit as they do spread a little. Bake for 15 minutes. Don't let them go brown. 

Cool on a wire rack, and serve with your favourite biscuit beverage. 



Feel free to mix up the flavours. Mint Chocolate is definitely one option I will try. Also for my old mate Jonny... The Blue Lagoon.
