Like his mother, my son adores pasta. He has the spoon twirling technique down along with making an exceptional mess and when I say mess I mean face, hair, nose, legs, feet, table (top and bottom), chair, floor, the works. Last time there was pasta in the heater. Anyway I don't care about the mess, his enthusiasm is a joy.
This is Tomo's favourite pasta. It is so easy to make and perfect for kids. Serve with steamed broccoli.
Please note, the portions will get you three servings for your little one. Well three for big eaters, four or five for others. You can freeze whatever is left in individual bags.
1 dstp olive oil
250 g streaky bacon, I use Hellers Manuka Smoked - Cut into lardons
200 g spaghetti
1 tin tomatoes, pureed
2 tsp sea salt
2 tsp caster sugar
Cracked black pepper
3 basil leaves, roughly sliced
Bring a large pot of water to the boil. Season with a pinch of salt
Heat oil in a fry pan and add bacon and fry till golden,crisp and there is about 2 tbsp fat in the pan.
Strain bacon, keeping the juice in the pan and set the bacon aside.
Add pasta to boiling water. Refer to packet instructions for cooking time.
Return the frypan to the heat, add tomato puree. It will probably taste like tomato soup - fear not! Give it a good stir to combine the two liquids.
Bring to a gentle simmer. Add the salt, sugar and pepper. Taste - adjust accordingly.
Add bacon. Allow to simmer for the duration of the pasta cooking time.
Strain pasta. Pour in sauce and basil. Toss to combine. Top with grated cheese.
It has to be noted that when cooking bacon for kids, you need to really render the crap out of the bacon fat. Otherwise it can be a chocking hazard for them. If you cook the bacon till nice and crisp, you will be sweet!
