Fennel, Date and Apple Mint Salad

This salad is a total winner. Stand alone or serve with seafood.Ingredients1 fennel bulb6 dates, depitted and pulled in half1 pomegranate, seeds removed1 orange, zest only2 stalks apple mint, (regular mint will be fine also), stalk removed3 tbsp extra virgin olive oil2 tbsp apple cider vinegar2 tsp brown sugar2 tsp sea saltUsing a mandolin or sharp knife, thinly slice the fennel.In a large bowl toss together the fennel, dates, pomegranate, zest and apple mint.In a separate bowl combine remaining ingredients.Toss everything together. Roasted Garlic and White Bean Dip

Best served with warmed flat bread.Ingredients1 garlic bulb1 tin cannellini beans, drained and rinsed2 tbsp Italian parsley¼ c extra virgin olive oilLemon juiceSea salt and pepperPreheat oven to 200 degrees.Wrap garlic bulb in tinfoil and roast for 15-20 minutes or until tender. Remove from skins.In a blender combine garlic, beans, parsley and oil. Baby Chard with Garlic, Lemon and Extra Virgin Olive Oil

Serve this as a side dish or it stands up as a meal on its own. Invest in good extra virgin olive oil, it will change your life.Ingredients4 c baby chard / silverbeet1 garlic clove, finely sliced1 tsp lemon zestExtra virgin olive oilSea salt and pepperBring a large pot of water to the boil.
