I grew up eating these ribs. They are an absolute family favourite. Much to his delight of me admitting this, my brother actually does them better than me. Rest assured this adapted version of his is still pretty darn fine.
2 kg pork ribs, still in rack
3 tbsp kecap manis
4 tbsp soy sauce
3 tbsp honey
4 tbsp tomato sauce, it has to be Wattie's
3 garlic cloves, crushed
3 tsp fresh ginger, grated
Preheat oven to 180 degrees.
Place the rib racks in a large roasting dish. Cook for 15 minutes or until the meat is still a little pink.
Combine all the remaining ingredients.
Pour over the ribs.
Cook for a further 30-40 minutes or until dark and sticky.
It is important to keep basting and turning them.
Best enjoyed with an ice cold pilsner.
