Best served with warmed flat bread.
1 garlic bulb
1 tin cannellini beans, drained and rinsed
2 tbsp Italian parsley
¼ c extra virgin olive oil
Sea salt and pepper
Preheat oven to 200 degrees.
Wrap garlic bulb in tinfoil and roast for 15-20 minutes or until tender. Remove from skins.
In a blender combine garlic, beans, parsley and oil. Blend until smooth.
Add lemon juice, salt and pepper to taste.
Drizzle with oil and season with freshly cracked black pepper.
