My lovely neighbour gifted me some luscious peaches from her tree. What a treat. I decided it was time for a tart.
Pasta Frolla - Option One
145 g butter
120 g honey
1 vanilla pod, seeds only
2 large eggs, plus 1 yolk
1 tsp cinnamon
55 g plain flour
155 g ground almonds
5 large peaches, washed, pip removed and sliced
Preheat oven to 200 degrees
Follow pastry instructions.
For the filling, cream butter and honey until light and creamy. Add eggs, one at a time until just combined.
Add cinnamon, flour and almond meal. Fold to combine.
Pour almond mixture into pastry case. Arrange peaches in the mixture, gently press down.
Pop in the oven, reduce the temperature to 175 degrees and bake for 35 - 40 minutes.
Allow to cool for 10 minutes before serving with vanilla ice cream.
