This is a super easy curd that tastes delicious and is relatively inexpensive if you substitute fresh passionfruit for pulp in syrup.
1 jar Tasti passionfruit pulp
170 g butter
200 g caster sugar
4 egg yolks
In a large saucepan combine the pulp, butter, sugar and lemon. Heat until the sugar dissolves and gently bring to the boil.
Remove from heat.
In a separate bowl have egg yolks lightly beaten.
Slowly pour the hot liquid into the yolks whisking all the time until the mixture is combined.
Pour back into the saucepan and return to a gentle heat stirring constantly for 10 minutes or until the mixture coats the back of a spoon.
Pour into sterilised jars. Allow to cool before putting in the fridge.
Goes with cake, scones, pancakes, waffles, cheesecake or whatever you want!
