Nectarine and Cinnamon Pancakes

The big day for lovers and losers is fast approaching, and if you are lame enough to get into the spirit of Valentines Day, then these are sure to woo that special person in your life.

Or if you are cynical and twisted like me and don't believe in it, make the batch and eat the entire lot yourself.

Either way, you will feel good.


1½ c plain flour
2½ tbsp caster sugar
1 tsp cinnamon
Pinch of salt
2 tsp baking powder
1 egg
1 tsp vanilla extract
3/4 c thick yoghurt 
3/4 c milk
3 tbsp oil
1 nectarine, sliced in half then half again

Maple Syrup
Icing Sugar

Combine all the dry ingredients in a bowl. Set aside

Combine all the remaining ingredients in another bowl.

Heat a crepe pan or fry pan over a medium to low heat.

Pour the wet mixture into the dry and whisk to combine. If it is a little thick, add more milk.

Place two pieces of nectarine close together on the pan and top with a spoonful of mixture. Use the back of the spoon to spread the mixture out and over the nectarine to make a circle. 
Allow to cook for a minute or two. The top should be covered in bubbles.

Flip. Cook for a further minute or two.

Turn out on a heated plate, cover with a tea towel and continue to cook remaining batter.

When ready to serve, arrange of a plate, sprinkle over blueberries and hazelnuts, dust with icing sugar and layer on the maple.

Serve. Enjoy!
