Mini Chocolate Chip Buttermilk Pancakes

I love making these for Tomi and he loves eating them.
I recommend Cadbury chocolate drops as they hold their shape really well but anything will do.
135 g plain flour
1 tsp baking powder
1/2 tsp salt
2 tbsp caster sugar
2 tbsp butter
10 ml golden syrup
120 ml buttermilk
1 egg, lightly beaten
3 tbsp milk chocolate drops
Combine flour, baking powder, salt and sugar in a bowl.
In a microwave safe bowl, melt butter and golden syrup together. Mix in buttermilk, then the lightly heated egg.
Make a well in the centre of the dry ingredients and pour in the milk mixture.
Using a whisk, stir it all together. Make sure there are no lumps.
Fold through the chocolate chips.
Heat a non-stick cooking plate or fry pan on a low-medium heat. If using the fry pan, lightly grease with butter.
Using a tablespoon, pour mixture onto pan. Lightly spread to make a circle.
Once bubbles appear over the entire surface, flip over - roughly one minute. Cook for a further minute and transfer to a tea-towel lined tray. Keep covered until all pancakes are cooked.
Serve with apple juice for the little one and a cup of tea for you.
