Honey Roasted Seed and Nut Granola

Breakfast / Brunch

Easy and satisfying. Best served with yoghurt and fresh fruit.


500 g wholegrain rolled oats
100 g pumpkin seeds
100 g sunflower seeds
75 g pecans
75 g cashew nuts
75 g hazelnuts
75 g slivered almonds
50 g shredded coconut
50 g desiccated coconut
50 g white sesame seeds
1 tsp ground cinnamon
80 g honey
75 ml extra virgin olive oil
50 g soft brown sugar

Preheat oven to 160 degrees.

Combine all the dry ingredients in a large bowl.

In a small saucepan melt the honey, oil and sugar together.
Pour over the dry ingredients and use your hands to coat evenly.

Divide the mixture onto two baking paper lined trays. Bake for 20 minutes, stir every so often to ensure even cooking.
Continue to cook until mix becomes golden.

Allow to cool in trays and store in airtight containers.

Serve. Enjoy!
