For many, Christmas Day can be an overwhelming affair. If you are looking for a simple way to serve turkey, here is the recipe for you.
This rolled turkey breast is so easy and so delicious. Perfect hot or cold with roast spuds and a big salad. Can easily be prepared a day in advance.
Don't forget the cranberry jelly!
1.2kg turkey breast, skin on
2 c Italian parsley
1 c mint
1 c basil
4 garlic cloves
Ground black pepper
1 tbsp sherry vinegar
100 g butter, softened
2 tbsp extra virgin olive oil
10 thyme sprigs
Preheat oven to 200 degrees.
Cover a work surface with glad wrap. Place the turkey on the glad wrap and cover with more glad wrap.
Using a rolling pin (or anything similar) smack the turkey until it resembles a square and is even thickness. Roughly 2-3cm.
In a blender combine parsley, mint, basil, garlic, shallot, salt, pepper, vinegar, 35g butter and oil. Blitz until blended and fine.
Spread evenly over the turkey.
Roll the turkey and truss with cooking string.
Place in an oven dish. Spread with the remaining butter and a drizzle of olive oil. Add the thyme sprigs to the dish.
Cook for around 1 hour.
To check if the meat is cooked, skewer and make sure the juices run clear.
Rest. Serve. Enjoy!
For crispy roast potatoes, pre boil then roast in the leftover juices from the turkey. Perfection.
