If you want to show your Mum how much you LOVE her, make her this on Mothers Day.

So easy and so yummy. She will adore you for it and if you have siblings you will become the favourite child. Ok maybe not but its worth a shot.

If you don't have a mum to share this with, still make it because it's exceptionally delicious and we all deserve a treat once in a while!

NOTE - this is a cheats hollandaise (no splitting). Stay turned for a traditional version...


9 rashes streaky bacon
3 english muffins
1/2 bag spinach
6 eggs
1 tbsp white wine vinegar
Italian parsley

Preheat oven to 200 degrees

Arrange bacon on a flat baking tray. Place in hot oven. Once cooked, slice each in half. Set aside

Slice muffins in half, arrange on a baking tray, spread a little butter over each one. Heat in oven with bacon for 10 or so minutes until warm and the butter has melted. Set aside.

Fill a medium sized saucepan with warm water, place spinach in, cover and cook over a medium heat until tender. Drain all the liquid out.

Fill a large saucepan with water and vinegar. Bring to the boil and reduce to a low simmer. Add eggs around the edges, you should be able to get all six in. They should be covered by water so leave them to cook for 5 minutes. Check that the whites are just cooked. 

To Arrange  -

English muffin, spinach, 3 bits of bacon, egg, hollandaise, garnish. Serve.
