As requested by my sister, chocolate peppermint brownies. Undeniably luscious and totally over the top.
If you don't like peppermint fear not, use any flavouring you like.
120 g dark chocolate
90 g butter
220 g caster sugar
1/2 c plain flour, siftedPeppermint Icing
2 c icing sugar
2 tbsp boiling water
1 tsp peppermint essenceGanache
250 g dark chocolate
3/4 c cream
Preheat oven to 180 degreesB
Place chocolate and butter in a small saucepan and melt until smooth over a low heat. Set aside.
In a separate bowl beat sugar and eggs till fluffy. Add flour and mix.
Stir in chocolate mixture and stir until combined.
Pour into 12 lined 1/2 cup capacity muffin tins. Bake for 25 minutes or until cake tester comes out clean.
Cool in tins.P
Combine all ingredients in a bowl and mix until smooth. Spread over the brownies.G
Place chocolate and cream in a small saucepan and melt until smooth over a low heat. Carefully spoon over the brownies.
Serve warm. Enjoy!
